The Magic of Chocolate Chip Cookies

True story: I believe our chocolate chip cookies can improve anyone’s day. It’s a bold claim, I know. And I know what you’re thinking: “what makes YOUR chocolate chip cookies so special?” It’s a fair question. While I can’t give away all of my tricks, I can tell you the one ingredient that I think is the most important of all: it’s all about the chocolate.

When I first started making chocolate chip cookies, I used Nestle Toll House semi-sweet chocolate chips (or the generic store version, depending on how much I had left in my grocery budget). They’re delicious, but they didn’t have that ooey-gooey melty goodness that I was looking for. Over the past decade, I’ve searched for the perfect fit for my chocolate chip cookies: dark chocolate chips, milk chocolate chips, chocolate feves, Hershey’s kisses, chocolate chunks … all delicious, none quite what I was hoping for. I was about to give up when my husband brought home a block of Callebaut chocolate one day and bam! Instant victory.

We hand cut our Callebaut chocolate bars so that each small batch of cookies has a combination of tiny shards, huge chunks, and some in-between pieces. Then we hand roll each ball of cookie dough and bake to perfection. It’s a bit of extra work, but good cookies are absolutely worth the extra time.
